Bourbon Barrel Foods makes an effort to source as many domestic ingredients as we can. Our chili peppers come from Rio Valley, a family-owned farm in Las Cruces, NM. They harvest, wash, and sort all the peppers by hand, and then place them on long, wooden trays. At every step of the process, from drying to custom blending, they show the same commitment to quality that we have—which takes a lot of dedication when you grow and process 12 million pounds of peppers every year. It feels good to know we’re working with people who share our passion.
We slow-smoke our spices in small batches using industrial smokers big enough to handle up to 1400 lbs of pork butt. Trays of spices are slow-smoked using staves from oak bourbon barrels that once held some of Kentucky’s finest bourbon. This process gives our Bourbon Smoked Chili Powder flavor notes of smoke and oak pulled from the barrels, and results in a mellow spice that isn’t hot, but that has tons of flavor.
